🧺 Why You’ll Love It
This dish is summer simplicity at its finest — sweet juicy
cherry tomatoes soak in a tangy-herb marinade, then meet dreamy-soft burrata
for a flavor match made in picnic heaven. Serve it with grilled or crusty
garlic bread, and watch it disappear faster than fireworks on the 4th.
🫒 Ingredients
- ½ cup
extra-virgin olive oil
- 2 tbsp
balsamic vinegar
- 2 tbsp
champagne or apple cider vinegar
- 2 tsp
honey
- 1–2
garlic cloves, finely grated
- ½ cup
fresh basil, chopped
- 2 tbsp
fresh thyme, chopped
- Kosher
salt & black pepper, to taste
- Pinch
of chili flakes (optional kick)
- 3 cups
cherry tomatoes, halved
- 2–3
balls burrata cheese, room temperature
- Grilled
bread or crackers, for serving
🍅 Instructions
- Make
the Marinade: In a bowl, whisk together olive oil, vinegars,
honey, garlic, herbs, salt, pepper, and chili flakes.
- Toss
the Tomatoes: Add halved cherry tomatoes to the marinade. Let
them soak 20–30 minutes at room temperature — enough time for flavor magic
to happen.
- Assemble
the Dish: Arrange burrata balls on a serving plate. Spoon the
marinated tomatoes over the top, drizzle with extra marinade, and scatter
a few fresh basil leaves for drama.
- Serve
it Up: Pair with warm garlic bread or crisp crackers. Bonus
points for a chilled rosé nearby.
💡 Tips & Twists
- Add
roasted corn or grilled peaches for an unexpected pop.
- Swap
thyme for oregano if that’s what your garden’s showing off.
- Leftover
tomato marinade makes an amazing salad dressing.
