🧄 Ingredients

Chicken:
6 boneless chicken breasts, pounded thin
2 tbsp olive oil
2 tsp (optional) fig preserves
1 tbsp champagne or balsamic vinegar
2 tbsp Italian seasoning
1 tsp dried oregano
1 clove garlic, chopped
¼ cup fresh basil, chopped
Pinch of salt, black pepper, and chili flakes
1 cup shredded mozzarella

Marinated Tomatoes:
½ cup olive oil
2 tbsp champagne or balsamic vinegar
1 tsp (optional) fig preserves
1 tbsp honey
1 shallot, finely chopped
2 cloves garlic, chopped
3 cups cherry tomatoes, halved
1 cup fresh basil, chopped


🔥 How to Make It

  1. Marinate the tomatoes:
    In a bowl, whisk olive oil, vinegar, honey, garlic, shallot, and basil. Toss in tomatoes and let them soak up the goodness while you cook the chicken.
  2. Cook the chicken:
    Brush chicken with olive oil, vinegar, and seasoning. Grill or bake (400°F for about 20 minutes) until golden and juicy.
