2 tsp (optional) fig preserves
1 tbsp champagne or balsamic vinegar
2 tbsp Italian seasoning
1 tsp dried oregano
1 clove garlic, chopped
¼ cup fresh basil, chopped

2 cloves garlic, chopped
3 cups cherry tomatoes, halved
1 cup fresh basil, chopped
🔥 How to Make It
- Marinate
the tomatoes:
In a bowl, whisk olive oil, vinegar, honey, garlic, shallot, and basil. Toss in tomatoes and let them soak up the goodness while you cook the chicken. - Cook
the chicken:
Brush chicken with olive oil, vinegar, and seasoning. Grill or bake (400°F for about 20 minutes) until golden and juicy. - Add
the mozzarella:
When chicken is nearly done, sprinkle mozzarella on top and let it melt to glorious perfection. - Finish
& serve:
Spoon marinated tomatoes over the cheesy chicken. Serve with toasted bread or toss everything with hot pasta.
