Thick & Fudgy Zucchini Brownies with Rich Fudge Frosting


 


These Thick & Fudgy Zucchini Brownies are rich, moist, and loaded with deep chocolate flavor — yet secretly packed with zucchini! The grated zucchini adds incredible texture and makes the brownies extra soft without tasting like vegetables. ⭐ Ingredients

Brownies:

  • 1 stick (1/2 cup) salted butter

  • 10 oz mini chocolate chips

  • 1 1/2 cups powdered sugar

  • 1 tablespoon vanilla extract

  • 4 large eggs, at room temperature

  • 1 cup grated zucchini (don’t squeeze out the moisture!)

  • 1/2 cup all-purpose flour

  • 1/2 cup unsweetened cocoa powder

  • 3/4 teaspoon baking powder

  • 1/2 teaspoon sea salt

  • 1/2 cup semi-sweet or dark chocolate chips

Fudge Frosting:

  • 4 tablespoons salted butter, melted

  • 2–3 cups powdered sugar

  • 1/4 cup cocoa powder

  • 1 teaspoon vanilla extract

  • 2 tablespoons warm milk (more if needed)


👩‍🍳 Instructions

Step 1 — Prep:
Preheat your oven to 350°F (175°C). Grease and line an 8x8-inch baking pan.

Step 2 — Melt Chocolate:
In a saucepan on low heat, melt butter and mini chocolate chips together. Stir until smooth. Remove from heat and cool slightly.

Step 3 — Mix Batter:
Whisk in powdered sugar and vanilla. Add eggs one at a time, mixing well.
Stir in grated zucchini.

Step 4 — Add Dry Ingredients:
Sift in flour, cocoa powder, baking powder, and sea salt.
Mix just until combined — don’t overmix!

Step 5 — Bake:
Fold in chocolate chips and spread the batter into the pan.
Bake 25–30 minutes or until the center is set.
Cool completely before frosting.


🍫 Make the Fudge Frosting

Whisk melted butter, cocoa powder, vanilla, and milk.
Slowly add powdered sugar until you reach a thick, spreadable consistency.
Frost the brownies and cut into squares.
