Chocolate Cake

  • 1 stick (1/2 cup) salted butter, melted

  • 2 large eggs, room temperature

  • 1/2 cup buttermilk, room temperature

  • 1/2 cup plain Greek yogurt or sour cream

  • 1 cup granulated sugar

  • 1 tbsp vanilla extract

  • 1 1/2 cups all-purpose flour

  • 1 cup unsweetened cocoa powder

  • 1 1/2 tsp baking powder

  • 1 1/2 tsp baking soda

  • 1 tsp salt

  • 3/4 cup hot black coffee

  • 1/2 cup dark or semisweet chocolate chips (optional)

Caramel Marshmallow Filling

  • 1 stick (1/2 cup) salted butter, room temperature

  • 1/2 cup packed dark brown sugar

  • 1 tsp salt

  • 1 bag (10 oz) mini marshmallows

Chocolate Glaze

  • 1 cup semisweet chocolate chips

  • 1/3 cup milk

Instructions

1. Make the Chocolate Cake

  1. Preheat oven to 350°F (175°C) and grease a 9×13-inch pan.

  2. In a bowl, whisk melted butter, eggs, buttermilk, yogurt, sugar, and vanilla.

  3. Add flour, cocoa powder, baking powder, baking soda, and salt.

  4. Pour in the hot coffee and mix until smooth and glossy.

  5. Fold in chocolate chips if using.

  6. Pour batter into the pan and bake 25–30 minutes, or until a toothpick comes out clean.

  7. Cool slightly.

2. Make the Filling

  1. In a saucepan, melt butter and brown sugar on medium heat until bubbling.

  2. Add salt and mini marshmallows.

  3. Stir until melted and creamy.

  4. Pour the warm caramel–marshmallow mixture over the cake and spread gently.

3. Make the Fudgy Glaze

  1. Warm the chocolate chips and milk over low heat, stirring until smooth.

  2. Pour the glossy glaze over the cake.

  3. Let it set slightly before slicing—if you can wait!

Tips for the Best Cake

  • Use fresh hot coffee to deepen the chocolate flavor (it won’t taste like coffee).

  • Serve slightly warm for maximum gooey goodness.

  • Chill in the fridge if you prefer a firmer, sliceable cake.

  • Top with flaky sea salt for an elevated finish.
