1 lb spicy Italian chicken sausage (casings removed)

½ lb ground beef or chicken

1 yellow onion, chopped

3 tbsp Italian seasoning

1 can (28 oz) crushed tomatoes

1–2 cups marinara sauce

4 cups chicken broth

4 cups chopped baby spinach

1 lb mafaldine pasta or 8 broken lasagna noodles

1 cup heavy cream

1 cup shredded mozzarella or provolone

½ cup grated parmesan

Fresh basil or parsley, chopped (for topping)
🍳 Instructions
1️⃣ Heat a large pot over medium heat. Add Italian sausage and ground beef. Cook until browned, breaking apart with a spoon.
2️⃣ Add the chopped onion. Cook 3–4 minutes until softened.
3️⃣ Season with Italian seasoning, salt, and pepper.
4️⃣ Pour in crushed tomatoes, marinara sauce, and broth. Stir to combine.
5️⃣ Bring to a boil, then add the pasta. Reduce heat and simmer 10–12 minutes until pasta is al dente.
6️⃣ Stir in spinach until wilted.
7️⃣ Pour in the heavy cream and add mozzarella and parmesan. Stir gently until creamy and melted.
8️⃣ Taste and adjust seasoning if needed.
9️⃣ Serve warm topped with basil or parsley — add garlic bread for the perfect cozy meal!
