Blondie Batter

3/4 cup (1 1/2 sticks) salted butter

1/4 cup apple butter or pure maple syrup

1 cup brown sugar

1 large egg

2 teaspoons vanilla extract

2 1/3 cups all-purpose flour

1 teaspoon baking powder

1 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

1 teaspoon kosher salt

1/2 cup semi-sweet chocolate chips

1/4 cup cinnamon sugar (for topping)
🥣 Instructions
1️⃣ Prepare the Cinnamon Swirl
In a small bowl, mix brown sugar, softened butter, and cinnamon until smooth and spreadable. Set aside.
2️⃣ Make the Blondie Batter
• Melt the butter in a saucepan over medium heat.
• Remove from heat and stir in the apple butter (or maple) and brown sugar until creamy.
• Whisk in egg and vanilla.
3️⃣ Dry Ingredients
In a separate bowl, whisk flour, baking powder, cinnamon, nutmeg, and salt.
Gently combine the dry mixture with the wet ingredients — don’t overmix.
Fold in chocolate chips.
4️⃣ Assemble
• Spread half the batter into a lined or greased 8x8-inch baking pan.
• Add all of the cinnamon swirl mixture in dollops, then lightly swirl with a knife.
• Top with the remaining batter (lightly spread) and sprinkle cinnamon sugar over the top.
5️⃣ Bake
Bake at 350°F (175°C) for 22–28 minutes until edges are set and the center is still soft.
Cool, slice into bars, and enjoy that gooey texture!
